Bumble Bars

Finals are just around the corner which means a lot more studying and a lot less sleep. The less sleep we get the more we usually cram down out throats just to try and stay awake. Instead of grabbing for that bag of skittles or that ice cream sandwich, why not try a healthier alternative that easy to make and actually tastes pretty darn good. They’re called Bumble Bars and don’t let the name intimidate you. They are a mixture of seeds, nuts, honey, and a bunch of other stuff birds eat. They may look kinda funny but trust me, its a dense treat thats going to give you the energy you need to get through the final push. Here’s the recipe:

Serves 15-20

1 1/2 cups sesame seeds

3/4 cup almond meal

1/2 cup flax seed (golden flax is preferred)

1/2 cup macadamia nuts

(finely chopped)

1/4 cup cashews (finely chopped)

1/2 cup brown rice syrup

(or corn syrup)

2 tablespoons evaporated cane syrup

(or corn syrup)

2 teaspoons cinnamon

1 teaspoon vanilla

1/2 teaspoon salt

1)Mix all ingredients together in a bowl and press into a well oiled 9 X 13 pan (I use olive oil spray).

2)Bake for 20 minutes at 300 degrees.

3)Cut in to bars while hot (it’s so much easier than trying to cut when cool!).

There are many different recipes out there using different ingredients but most of them are the same. Give it a try and figure out what you want most in your very own Bumble Bar!
